So this morning I finally got to make my Cream of Tomato-Basil soup. I love this soup…lost 2 batches of fresh basil because I didn’t have the time to make it. But today I did make it!
I had the soup in a pot ready to be heated up on the stove…I purposely had it pushed to the back of the counter!
I walk into the kitchen to heat it up and …”BUSTER” I yelled…as he finished off half of the soup spilling the other half all over my kitchen counter!!!!
Does this dog have a death wish???
Cream of Tomato-Basil soup Recipe
1 28oz + 1 14oz can of whole tomatoes or 6 medium tomatoes peeled
Lots of fresh basil
About 2 cups of chicken broth…I use Goya’s Chicken-tomato broth packets
1 medium onion
2T flour…you can use wheat flour
1 cup milk or half and half (I split it…1/2 cup milk and 1/2 cup H ‘n H)
White pepper + a little kosher or sea salt to taste
Combine first 4 ingredients and bring to boil, and then let simmer for 15 minutes. Allow the mixture cool before placing it in a blender or food processor and blend. Do this process in batches, putting each blended batch into a large bowl.
In the pot you already used…melt butter and add flour to make a rough. Gradually add the milk and/or H ‘n H. Let mixture boil and thicken, stirring constantly. Once thickened add the tomato mixture and the white pepper to the pot and heat through.
Make sure all Dogs are out of the kitchen during the process of making soup…and don’t leave your soup unattended!!!
